ROASTED ALMOND BUTTER SWEET POTATO BROWNIE

This is my favourite Vegan Brownie Recipe !!

Ingredients

  • 1 medium size sweet potato
  • 1/2 cup Maple Syrup
  • 3/4 cups of raw almonds for roasting or ⅔ cup of Roasted Almond butter ( if making your own: Roast raw almonds at 380′ for approx. 15 – 20 min, stirring at least once throughout the baking, blend roasted almonds in food processor adding sunflower oil until runny and smooth, if using Almond butter add 2 tbs of sunflower oil )
  • 3 tsp pure vanilla
  • 1/2 cup cocoa powder
  • 1/4tsp salt
  • 1 tsp baking powder ( aluminium free )
  • 1 1/3 cup quick plain oats or oat flour ( in food processor blend oats until ground to rough flour )
  • 1/2 cup vegan chocolate chips

Instructions

  • To make sweet potato puree, peel the potato, cube and boil it in enough water to cover it. Another option is to bake it ( half the potato with skin on, brush it with oil and place it face down on a parchment – lined baking sheet. Bake at 375 for 25 min or until tender ) peel the potato and mush it.
  • Preheat oven to 355 degrees F ( 180 ‘C ) and line 8×8 baking pan with parchment paper. Set aside.
  • In your food processor, blend oats until rough flour forms, add salt and baking powder. Set the flour aside. *If making your almond butter place the almonds in the food processor and blend adding enough sunflower oil ( approx. 1/4-1/2 cup ) to make the almond butter runny ( this will make the brownies moist and create fudge like consistency of the brownie )
  • Add sweet potatoes to the almond butter,
  • Add vanilla and maple syrup.
  • Transfer batter out of the food processor into a bowl, add oat flour with baking powder and salt, mix it all well with spatula. Fold in chocolate chips.
  • Transfer to your parchment – lined baking dish and spread using your rubber spatula.
  • Bake on the center rack at 355 for 35-40 min.
  • To check, insert a toothpick into the centre, it should come out mostly clean.
  • Cool and enjoy!
  • These brownies are moist and delicious, you can serve them with Tahini Sauce to elevate the flavour.

Notes

You can use store bought almond butter or any nut butter
